Zucchini Fritters Improved
Perhaps an even better version of zucchini fritters.

Ingredients
- 3 cups shredded zucchini
- 1 medium onion, finely chopped
- 1 1/2 teaspoons salt
- 1 egg
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1/3 cup cornmeal
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 3 tablespoons olive oil
Directions
- squeeze as much liquid as possible out of the zucchini
- in a mixing bowl, whisk egg, then combine garlic, salt, and pepper
- fold in zucchini and onion
- whisk in cornmeal, cornstarch, and baking powder
- heat the oil in a large skillet over medium heat
- add about 2 tablespoons of the zucchini mixture into the skillet and flatten with a spatula for each fritter
- cook until golden brown and flip, about 3 minutes per side
- transfer to a draining rack and cook the rest
- serve with a sauce such as creamy dill sauce or kewpie
