Zucchini Fritters Improved

Ingredients

  • 3 cups shredded zucchini
  • 1 medium onion, finely chopped
  • 1 1/2 teaspoons salt
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1/3 cup cornmeal
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 3 tablespoons olive oil

Directions

  1. squeeze as much liquid as possible out of the zucchini
  2. in a mixing bowl, whisk egg, then combine garlic, salt, and pepper
  3. fold in zucchini and onion
  4. whisk in cornmeal, cornstarch, and baking powder
  5. heat the oil in a large skillet over medium heat
  6. add about 2 tablespoons of the zucchini mixture into the skillet and flatten with a spatula for each fritter
  7. cook until golden brown and flip, about 3 minutes per side
  8. transfer to a draining rack and cook the rest
  9. serve with a sauce such as creamy dill sauce or kewpie
