Ingredients

  • 1 pound zucchini, about 3 cups shredded
  • 2 eggs
  • 1 1/2 cups chopped scallions
  • 3 cloves garlic
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 2 1/4 cups panko breadcrumbs (corn meal is a decent substitute)
  • 3 tablespoons all-purpose flour
  • freshly ground black pepper
  • oil

Directions

  1. grate the zucchini, use a towel to squeeze out excess moisture
  2. in a large bowl, whisk eggs, add zucchini, scallions, dill, lemon zest, salt, several grinds of pepper
  3. add 1 1/2 cups of the breadcrumbs and the flour, fold to combine
  4. place remaining 3/4 cup of breadcrumbs in a shallow dish and set aside
  5. preheat skillet on medium heat
  6. form zucchini mixture into 1/4 cup patties, coat in reserved breadcrumbs
  7. coat the skillet generously with oil
  8. cook patties for 2 to 3 minutes on each side until well browned
  9. drain, season to taste, serve with some awesome sauce such as tartar sauce or creamy dill sauce
