Zucchini Fritters

Too much zucchini? Fry up some tasty fritters.

Ingredients
- 1 pound zucchini, about 3 cups shredded
 - 2 eggs
 - 1 1/2 cups chopped scallions
 - 3 cloves garlic
 - 2 tablespoons chopped fresh dill
 - 1 tablespoon lemon zest
 - 1 teaspoon salt
 - 2 1/4 cups panko breadcrumbs (corn meal is a decent substitute)
 - 3 tablespoons all-purpose flour
 - freshly ground black pepper
 - oil
 
Directions
- grate the zucchini, use a towel to squeeze out excess moisture
 - in a large bowl, whisk eggs, add zucchini, scallions, dill, lemon zest, salt, several grinds of pepper
 - add 1 1/2 cups of the breadcrumbs and the flour, fold to combine
 - place remaining 3/4 cup of breadcrumbs in a shallow dish and set aside
 - preheat skillet on medium heat
 - form zucchini mixture into 1/4 cup patties, coat in reserved breadcrumbs
 - coat the skillet generously with oil
 - cook patties for 2 to 3 minutes on each side until well browned
 - drain, season to taste, serve with some awesome sauce such as tartar sauce or creamy dill sauce
