Southwest Quinoa Salad

Quinoa salad with chili lime dressing.

Ingredients
- 1 cup quinoa
 - 2 cans black beans
 - 1 can corn
 - 1 red bell pepper, chopped
 - 1 yellow bell pepper, chopped
 - 1 jalapeno pepper, seeded and chopped
 - 1 cup cherry tomatoes, chopped
 - 4 stalks of scallions, chopped
 - 1/4 cup red onion, chopped
 - 1 avocado, cut into cubes
 - 1/4 cup olive oil
 - 1 tablespoon lime zest
 - 4 tablesppons lime juice
 - 2 cloves garlic, minced
 - 1 teaspoon cumin
 - 1/2 teaspoon chili powder
 - 3/4 teaspoon kosher salt
 - 1/2 teaspoon honey
 
Directions
- Cook quinoa in 2 cups of water with a pinch of salt.
 - Mix olive oil, lime zest, lime juice, garlic, cumin, chili powder, salt, and honey to make the chili-lime dressing.
 - Toss everything in a large salad bowl, drizzle with salad dressing.
