Ingredients

  • 1 cup quinoa
  • 2 cans black beans
  • 1 can corn
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 cup cherry tomatoes, chopped
  • 4 stalks of scallions, chopped
  • 1/4 cup red onion, chopped
  • 1 avocado, cut into cubes
  • 1/4 cup olive oil
  • 1 tablespoon lime zest
  • 4 tablesppons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon honey

Directions

  1. Cook quinoa in 2 cups of water with a pinch of salt.
  2. Mix olive oil, lime zest, lime juice, garlic, cumin, chili powder, salt, and honey to make the chili-lime dressing.
  3. Toss everything in a large salad bowl, drizzle with salad dressing.
