Southwest Anaheim Stuffed Peppers

Peppers stuffed with southwest flavor.

Ingredients
- 4 Anaheim peppers, cut in half with seeds and membrane removed
 - 2 cups shredded chicken
 - 1 cup corn
 - 1 cup salsa
 - 1 can black beans, drained and rinsed
 - 2 tablespoons taco seasoning
 - 6 ounces cream cheese, room temperature
 - 1 cup cheddar cheese, shredded
 - sour cream, for garnish
 
Directions
- preheat oven to 375 degrees
 - in a medium bowl, combine the chicken, corn, beans, salsa, taco seasoning, and cream cheese
 - fill each pepper with the stuffing mixture and place them in a baking dish topped with shredded cheese
 - bake for 20 minutes or until pepper is soft and cheese is melted
 - top with sour cream
