Ingredients
- 4 pounds of chicken wings
 - Chicken Shit rub
 - kosher salt
 
Directions
- dry brine chicken wings with kosher salt
 - coat with rub
 - set up grill for indirect cooking at 180 degrees
 - add smoke wood, cherry is excellent
 - smoke at 180 degrees for 1 hour
 - increase heat to 350 degrees to finish and crisp the skin, about another 30-45 minutes
