Sausage and Chickpea Soup

A delicious soup from Hello Fresh.

Ingredients
- 1 large white onion, diced
 - 2 cans chickpeas
 - 1 pound hot sausage
 - 2 cups chicken broth
 - 3 cups water
 - 3 ounces tomato paste
 - 1 tablespoon Italian seasoning
 - 10 ounces spinach or kale
 
Directions
- cook sausage
 - add onion; cook, stirring occasionally, until softened
 - stir in tomato paste and Italian seasoning; cook while stirring about 30 seconds
 - add water, chicken broth, chickpeas, and a pinch of salt
 - cover and bring to a boil, then reduce to a simmer for 7 minutes
 - uncover pot and stir in spinach/kale; simmer until wilted
 - season to taste with salt and pepper
