Sausage and Chickpea Soup

Ingredients

  • 1 large white onion, diced
  • 2 cans chickpeas
  • 1 pound hot sausage
  • 2 cups chicken broth
  • 3 cups water
  • 3 ounces tomato paste
  • 1 tablespoon Italian seasoning
  • 10 ounces spinach or kale

Directions

  1. cook sausage
  2. add onion; cook, stirring occasionally, until softened
  3. stir in tomato paste and Italian seasoning; cook while stirring about 30 seconds
  4. add water, chicken broth, chickpeas, and a pinch of salt
  5. cover and bring to a boil, then reduce to a simmer for 7 minutes
  6. uncover pot and stir in spinach/kale; simmer until wilted
  7. season to taste with salt and pepper
