Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 onion, finely chopped
  • 1/4 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 2 cans pinto beans (15 ounce cans)
  • 1/2 cup water
  • 1 tablespoon lime juice (1 lime)

Directions

  1. heat oil in saucepan over medium heat
  2. sweat onion and salt, 5 to 8 minutes
  3. add garlic, chili powder, and cumin; stirring about 30 seconds
  4. add beans and water, stir, cover and cook for 5 minutes
  5. reduce heat to low and uncover, mash beans, cook 3 more minutes
  6. remove from heat and stir in lime juice; add water if needed to reach desired texture
