Refried Beans

Easy and delicious refried beans.

Ingredients
- 1 tablespoon extra-virgin olive oil
 - 1/2 onion, finely chopped
 - 1/4 teaspoon salt
 - 2 cloves garlic, minced
 - 1/2 teaspoon chili powder
 - 1/4 teaspoon ground cumin
 - 2 cans pinto beans (15 ounce cans)
 - 1/2 cup water
 - 1 tablespoon lime juice (1 lime)
 
Directions
- heat oil in saucepan over medium heat
 - sweat onion and salt, 5 to 8 minutes
 - add garlic, chili powder, and cumin; stirring about 30 seconds
 - add beans and water, stir, cover and cook for 5 minutes
 - reduce heat to low and uncover, mash beans, cook 3 more minutes
 - remove from heat and stir in lime juice; add water if needed to reach desired texture
