Habanero Hot Sauce

Notes

  • wear gloves
  • ventilate very well or you will pepper spray yourself
  • store for up to 3 months in the refrigerator

Ingredients

  • 15-20 habanero peppers
  • 1/2 cup white vinegar
  • 4 teaspoons olive oil
  • 4 teaspoons white sugar
  • 2 cloves garlic
  • 1/2 teaspoon salt

Directions

  1. wash peppers thoroughly
  2. remove stems and seeds; roughly chop peppers and garlic
  3. heat oil in medium sauce pan over low heat
  4. add the peppers and cover; cook, stirring occasionally until pepper soften, about 8 minutes
  5. add the garlic; continue cooking until fragrant, about 2 minutes
  6. add vinegar, sugar, and salt
  7. bring to a simmer, cover, cook for 10 minutes on low heat
  8. remove from heat and allow to cool for 10 minutes, covered
  9. pour mixture into a blender or food processor, blend until smooth
  10. add additional vinegar 1 tablespoon at a time until desirable consistency is achieved
