Habanero Hot Sauce
Simple, spicy, delicious hot sauce.

Notes
- wear gloves
- ventilate very well or you will pepper spray yourself
- store for up to 3 months in the refrigerator
Ingredients
- 15-20 habanero peppers
- 1/2 cup white vinegar
- 4 teaspoons olive oil
- 4 teaspoons white sugar
- 2 cloves garlic
- 1/2 teaspoon salt
Directions
- wash peppers thoroughly
- remove stems and seeds; roughly chop peppers and garlic
- heat oil in medium sauce pan over low heat
- add the peppers and cover; cook, stirring occasionally until pepper soften, about 8 minutes
- add the garlic; continue cooking until fragrant, about 2 minutes
- add vinegar, sugar, and salt
- bring to a simmer, cover, cook for 10 minutes on low heat
- remove from heat and allow to cool for 10 minutes, covered
- pour mixture into a blender or food processor, blend until smooth
- add additional vinegar 1 tablespoon at a time until desirable consistency is achieved
