Dairy-Free Ice Cream

A dairy-free, but not vegan vanilla ice cream.

Ingredients

  • 2 cups cashew milk
  • 1 teaspoon vanilla bean paste
  • 3 egg yolks
  • 1/2 cup sugar
  • 1/4 teaspoon salt

Directions

  1. heat cashew milk in saucepan over medium heat
  2. slowly whisk sugar and salt into egg yolks in a mixing bowl
  3. once milk is near boiling, temper into egg yolk mixture
  4. transfer tempered egg mixture to the saucepan and bring up to 160 degrees
  5. chill the custard
  6. make ice cream
