Ingredients

  • 1 pound ground sausage
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 12 large eggs
  • 1/2 cup milk
  • 1 tablespoon hot sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag frozen potato tots (32 ounce)
  • 1 cup shredded cheese

Notes

Build in miniature with muffin cups for about 24 egg muffins!

Directions

  1. preheat over to 350 degrees
  2. heat a large skillet over medium-high heat
  3. cook sausage until browned and broken up, about 5 minutes
  4. add onion and bell pepper, stirring occasionally, 8-10 minutes
  5. whisk together eggs, milk, hot sauce, salt, and black pepper
  6. arrange tots in an even layer in a greased 3-quart baking dish
  7. top tots with half of the shredded cheese and the sausage mixture
  8. pour egg mixture evenly over tots and top with remaining cheese
  9. bake 40-60 minutes until set in the middle
