Breakfast Casserole

A delicious breakfast casserole.

Ingredients
- 1 pound ground sausage
 - 1 onion, chopped
 - 1 red bell pepper, chopped
 - 12 large eggs
 - 1/2 cup milk
 - 1 tablespoon hot sauce
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1 bag frozen potato tots (32 ounce)
 - 1 cup shredded cheese
 
Notes
Build in miniature with muffin cups for about 24 egg muffins!
Directions
- preheat over to 350 degrees
 - heat a large skillet over medium-high heat
 - cook sausage until browned and broken up, about 5 minutes
 - add onion and bell pepper, stirring occasionally, 8-10 minutes
 - whisk together eggs, milk, hot sauce, salt, and black pepper
 - arrange tots in an even layer in a greased 3-quart baking dish
 - top tots with half of the shredded cheese and the sausage mixture
 - pour egg mixture evenly over tots and top with remaining cheese
 - bake 40-60 minutes until set in the middle
