Ingredients

  • 3 cans great northern beans
  • 3 cans black beans
  • 1 onion, chopped
  • 4 small jalapenos, seeded and chopped
  • 1/2 cup tomato paste
  • 1/2 cup dark brown sugar
  • 1/4 cup molasses
  • 3 cups vegetable broth
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoon black pepper
  • 1 teaspoon kosher salt

Directions

  1. preheat oven to 250 degrees
  2. in a cast iron Dutch oven over medium heat, sweat onion and jalapenos to soften, about 5 minutes
  3. stir in the tomato paste, dark brown sugar, and molasses
  4. add the beans and vegetable broth and bring to a boil over high heat
  5. add in cayenne, black pepper and salt; stir and cover with the lid
  6. place the Dutch oven in the oven while preparing to smoke
  7. configure grill for indirect heat around 250 degrees
  8. add smoke wood and beans; smoke for 1 hour
